About this recipe: A quick and easy recipe for individual beef Wellingtons. This recipe makes 6 so perfect if you have a small gathering of guests at Christmas or for another special occasion.
Ingredients:
• 450g fresh mushrooms, sliced
• 1 onion, finely diced
• 120ml sherry
• 60g butter
• 1 tablespoon chopped parsley
• 6 (250g) fillet steaks
• 1 (500g) packet ready to roll puff pastry
Method: Prep:20min - Cook:25min - Ready in:45min
• In a large frying pan over medium heat, combine the mushrooms, onion, sherry, butter and parsley. Cook, stirring often, until the water from the mushrooms has evaporated and the mixture resembles a thick paste. Cover the top of each steak with the mixture.
• Partially thaw the puff pastry sheets and roll out pieces thin enough to cover the top, sides and bottom of each steak. Place the pastry-covered steaks on a baking tray, cover with clingfilm and store in the refrigerator until you're ready to cook them.
• Preheat the oven to 220 degrees C / LP Gas Mark 7.
• Bake the beef wellingtons for 25 minutes. The steaks will be rare but will continue cooking while the dish is resting. Best served piping hot. One of my Favorites – Bird
